Ingredients
- 10 uncooked lasagna noodles
- 2 cups favorite salsa
- 1 pound ground beef
- 1 package taco seasoning
- 1 small red onion diced
- 1 cup fresh mushrooms sliced
- 2 cups small curd cottage cheese
- 1/2 cup fresh parmesan cheese grated
- 2 tablespoons fresh parsley chopped
- 1 15.5 ounce jar salsa con queso sauce
- 2 cups shredded mexican cheese blend

Step 1Fill a large pot with water and salt and bring to a boil. Cook the noodles for about 10 minutes. Drain and lay flat on parchment paper.

Step 2Mix the cottage cheese, Parmesan cheese and parsley together and set aside.

Step 3Add a little oil to a large skillet and add the red onion and mushrooms and cook about 5 minutes. Add the ground beef breaking it up and cook until no longer pink. Stir in the taco seasoning.

Step 4Preheat oven 350 degrees. In a large baking dish pour int the salsa. Spread some cottage cheese mixture on each lasagna noodle. Top with some meat mixture. Roll up and place in the pan on top of the salsa.

Step 5Top each lasagna roll with the salsa con queso sauce. Sprinkle the cheese over the whole thing and top the pan with foil.

Step 6Bake for 40 minutes. Remove from oven and remove the foil. Let sit 10 minutes then serve.
