Ingredients

  • 1 pound ground beef
  • 1 package flour tortillas
  • 1 can stewed tomatoes, mexican
  • 1 package taco seasoning mix
  • 2 cups cottage cheese, small curd
  • 2 - eggs
  • 2 cups cheddar cheese, shredded
  • 1 jar durkee french fried onions

How To Make mexican lasagna

  • Step 1
    Brown Ground beef, drain fat. Add Stewed tomatoes and taco seasoning. Simmer 5 minutes. In a medium bowl mix together cottage cheese, eggs and 1 cup of the cheddar cheese. Then grease a 9x13 pan. Lay 4 of the taco shells in bottom. put meat mixture on top of shells. Layer 4 more shells over meat. Top with cheese mixture and French Fried Onions. Cover and bake about an hour at 375. The last few minutes, take off cover and top with rest of cheddar cheese.
