This recipe's story is great and tasty! As I remember, I got it from the One Pot Meals for Diabetics and I wasn't too sure. Seemed like a strange combination. But Surprise! Bestest Bill just loves it. It's now our fave.

Ingredients

  • 1 c
    onion, chopped
  • 3 clove
    garlic, chopped
  • 3/4 lb
    hamburger, leanest
  • 3 c
    potatoes, baked (nuke), chopped
  • 1` can(s)
    diced tomatoes
  • 1 tsp
    cinnamon
  • 1/2 tsp
    cumin
  • 1 1/2 c
    celery, coarsely chopped
  • 1/2 c
    raisins, golden, soaked
  • 1
    apple, very thinly sliced a good bite size :)

How to Make Mexican Hash

Step-by-Step

  1. Brown meat,stirring with onion, garlic, cinnamon, cumin
    ~~ not too long, just so no pink.
  2. Lightly salt potato cubes.
  3. Stir in the potatoes and apples and tomatoes.
  4. Finish off by stirring in the raisins and celery.
  5. Keep hot ten minutes.
