This recipe's story is great and tasty! As I remember, I got it from the One Pot Meals for Diabetics and I wasn't too sure. Seemed like a strange combination. But Surprise! Bestest Bill just loves it. It's now our fave.

Ingredients

1 c
onion, chopped
3 clove
garlic, chopped
3/4 lb
hamburger, leanest
3 c
potatoes, baked (nuke), chopped
1` can(s)
diced tomatoes
1 tsp
cinnamon
1/2 tsp
cumin
1 1/2 c
celery, coarsely chopped
1/2 c
raisins, golden, soaked
1
apple, very thinly sliced a good bite size :)

How to Make Mexican Hash

Step-by-Step

  • 1Brown meat,stirring with onion, garlic, cinnamon, cumin
    ~~ not too long, just so no pink.
  • 2Lightly salt potato cubes.
  • 3Stir in the potatoes and apples and tomatoes.
  • 4Finish off by stirring in the raisins and celery.
  • 5Keep hot ten minutes.
