Ranch Style Beans are a Texas product so you can use black beans drained if you would like. I also add a can of whole kernel corn drained at times. You just need to use 2 cans of any cream of soup; onion,celery, chicken & or mushroom soups. You ca also make this without the cheese and it is really good that way to

Ingredients For mexican casserole

  • 2 lb
    ground beef, or turkey
  • 1 md
    onion chopped small
  • 1 md
    green bell pepper chopped small
  • 2 can
    cream of soup see note
  • 1 can
    ranch style beans
  • 1 can
    rotel tomatoes (tomatoes & chiles)
  • 2 c
    grated cheese
  • 1 pkg
    tostidos chips

How To Make mexican casserole

  • 1
    cook ground meat with onion & bell pepper, until no longer pink, drain. In a seperate saucepan add soup, beans & tomatoes & chiles and cook til boiling

    In a 13x9 in casserole spray bottom with cooking spray. Then crumble up the chips & cover the bottom of casserole with the crumbled chips. Add cooked meat mixture, then pour on soup mixture and top with more crumbled chips & finally sprinkle o the cheese

    Put in a preheated 350 degree oven & heat for 30 minutes. or until heated through. Serve warm with salsa
