My fiance love this... so does his brother... and their dad... haha. Super simple and an easy-to-remember ingredient list.

Ingredients

  • 1 pound ground beef (or turkey works too)
  • 1 package taco seasoning
  • 1/3 cup water
  • 1 tablespoon minced garlic
  • 2 cans pinto beans, drained
  • 1 can diced tomatoes and green chilies (like ro-tel), drained
  • 1 package of your favorite cornbread mix (i like to use jiffy, requires egg and milk)
  • 1 package taco seasoned shredded cheese

How To Make mexican casserole

  • Step 1
    Preheat oven to temperature specified on cornbread package (usually around 400 degrees or so).
  • Step 2
    Brown and crumble ground beef. Drain.
  • Step 3
    Add taco seasoning and 1/3 cup water. Add garlic. Cook until heated through.
  • Step 4
    Meanwhile, in an 9x13 casserole dish, mix pinto beans and tomatoes together.
  • Step 5
    Add ground beef to casserole dish. Stir.
  • Step 6
    Add cheese to top of mixture.
  • Step 7
    Prepare cornbread as directed on its package. Pour cornbread mix over casserole and bake as specified on cornbread package (usually at 400 degrees for 20-25 minutes).
  • Step 8
    Enjoy!!!
