This is a recipe that my sister and I used to make many years ago. It was one of our first "Mexican Food" recipes that we learned to cook when we were very young. Even though it's not an authentic Mexican recipe, it is very good and very easy when you are in a hurry for something good and hot.

Ingredients For mexican casserole

  • 1 1/2 lb
    ground beef
  • 1 c
    chopped onion
  • 1 Tbsp
    chopped garlic
  • 1 tsp
    black pepper
  • 1 tsp
    ground cumin
  • 2 can
    cream of chicken/mushroom soup
  • 4 c
    cheddar/jack cheese, shredded
  • 1 can
    (4 oz) diced green chilies
  • 1
    bag dorito corn chips
  • OPTIONAL GARNISHES:
  • shredded lettuce
  • chopped onions
  • diced tomatoes
  • diced avocado
  • diced jalapeno
  • sour cream
  • black olives

How To Make mexican casserole

    In a medium skillet, crumble the ground beef, add the chopped onion, garlic salt, black pepper, and cumin; cook on medium heat until meat is no longer pink. Drain the grease from the meat and put the meat into a medium bowl.

    Combine the cream of mushroom and cream of chicken soup in the bowl with the meat; add one cup cheese and diced green chilies. Stir well to combine.

    In a 9 x 13 baking dish (sprayed with non-stick cooking spray), place a layer of Doritos, layer half of the meat on top of Doritos, and then a layer of cheese. Repeat the Doritos, meat mixture and cheese again putting lots of cheese on the very top.

    Cover with aluminum foil and bake at 400 F for 30 minutes, remove foil and bake an additional 15 minutes or until cheese is melted and bubbly (not browned).

    Garnish with your favorite topping and serve immediately. ENJOY!
