I have been making this casserole several years. My friend and I were in PTA when her son and my daughter were in middle school, she served this casserole for Teachers Appreciation Day, it was a big hit.

ground chuck
1/2 c
chopped onion
1 can(s)
cream of chicken soup
3/4 can(s)
1 can(s)
large, enchilada sauce
1 can(s)
green chilies
nacho cheese chips
shredded cheese

How to Make Mexican Casserole


  • 1Layer 9x13 Dish with Nacho Cheese Chips
  • 2Pour onions into skillet, add ground chuck and brown.
  • 3Mix cream of chicken soup, milk, enchilada sauce and green chilies. Heat with onions and ground chuck until well mixed.
  • 4Pour over Nacho Cheese Chips.
  • 5Add Shredded Cheese.
  • 6Bake at 350 degrees until cheese is melted, approximately 20 to 25 minutes.
  • 7Serve with Nacho Cheese Chips.
