Ingredients

  • 1 package corn tortillas
  • 1 pound ground beef
  • 1 medium onion, chopped
  • 1 can ranch style beans
  • 1 can rotel
  • 1 can cream of chicken soup
  • 1 pound velveeta cheese
  • 1 tablespoon chili powder
  • - salt and pepper to taste

How To Make mexican casserole

  • Step 1
    Cook beef, onion, salt, pepper and chili powder until meat is browned. Drain off fat.
  • Step 2
    Place six tortillas in a 13x9 casserole dish. Spread meat over tortillas. Follow with beans and rotel.
  • Step 3
    Slice cheese and layer on next. I have decreased the amount of cheese by half and it is still good.
  • Step 4
    Layer on 6 more tortillas. Top with cream of chicken soup. Cover with foil.
  • Step 5
    Bake at 350 degrees for one hour.
