I have had this recipe for at least 50 years. Good friends of ours would have us over for dinner. This was so cheap to fix because at that time we could buy hamburger 3#'s for $1.00...oh, how times have changed.

Ingredients

  • 1 lb
    ground beef
  • 1 medium
    onion-chopped
  • ·
    salt, pepper, garlic powder (i use fresh garlic)
  • 2 small
    cans of kidney beans-drained
  • 1 can(s)
    enchilada sauce
  • 1 c
    cheddar cheese, shredded
  • 1 Tbsp
    chili powder
  • 1/2 c
    corn chips--fritos

How to Make Mexican Casserole

Step-by-Step

  1. Cook ground beef and onion until done. Drain. Add salt, pepper, garlic powder.
  2. Add kidney beans, enchilada sauce, cheese, chili powder, and corn chips. Stir to combine.
  3. Put in a casserole and bake in a 350 degree oven for 30 minutes or until hot and bubbly.
  4. Serve with a salad dressed with a nice Mexican type dressing.
