This is one of my faveorite easy recipes. My son loves this because no chuncks of tomatoes. LOL. You can tweak it yourself and add to it. Hope you enjoy!! It's YUMMY!!!

Ingredients

  • 2 pounds ground beef extra lean
  • 1 package flour tortillas
  • 1-2 package philadelphia cream cheese
  • 1 can ranch style beans
  • 2-3 tablespoons sour cream
  • 6 cups colby jack cheese shredded
  • 1 can rotel
  • 1 can campbells cream of onion soup
  • 2 oer more teaspoons taco seasoning mix
  • 1/2 medium onion

How To Make mexican casserole

  • Step 1
    brown ground meat with garlic and onion, season to taste but not too much because the half of taco seasoning will season it some. Add the taco seasoning and the drained ranch style beans and continue to cook on low. Add the block of cream cheese and stir till melted thouroughly.
  • Step 2
    Blend the rotel, sour cream and cream of onion (you don't have to it is optional, I have a picky little one)
  • Step 3
    Pour blended mixture into pan with meat, beans and cream cheese. Stir untill looks all mixed well. Taste to see if need more seasoning.
  • Step 4
    In a 13x9 pan spray with pam then layer flour tortillas, meat sauce, some green onion if you like, then some of the shredded cheese just to cover, then do two more layers like that. Bake 350 for approx 30-45 minutes till cheese is nice and golden brown. Let cool bout 10 min or so then dig in, garnish with sour cream and green onion if you like...YUM!!
