This is so easy and quick - great for a quick weeknight dinner. My kids love it and there are NEVER leftovers!

  • 1 1/2 lb
    lean ground beef
  • 1 pkg
    taco seasoning
  • 3/4 c
  • 1 can(s)
    tomato soup
  • 1 can(s)
    refrigerated buttermilk biscuits
  • 2 c
    shredded cheddar cheese
  • 2 c
    shredded lettuce
  • 2
    tomatoes, chopped
  • 1 c
    salsa, chunky
  • 1 small
    can sliced olives, drained
  • 8 oz
    sour cream
  • 3
    green onions, sliced

How to Make Mexican Bubble Pizza


  1. Heat oven to 375F.
  2. Brown ground beef in large skillet over medium-high heat until thoroughly cooked; drain.
  3. Add taco seasoning, water and soup; mix well.
  4. Bring to a boil. Reduce heat to low and simmer for 3 minutes. Remove from heat.
  5. Cut each biscuit into 8 pieces. Add pieces to ground beef mixture; stir gently.
  6. Spoon mixture into 13x9 pan.
  7. Bake for 18-23 minutes until sauce is bubbly and biscuits are golden brown.
  8. Remove from oven. Sprinkle with cheese.
  9. Return to oven and bake an additional 8-10 minutes until cheese is melted.
  10. Cut into squares. Top with lettuce, tomato, salsa, olives, sour cream and onions.
