A family favorite. We add a green salad.

Ingredients

  • 1 pound lean ground beef
  • 1/3 cup chopped fresh cilantro, (optional)
  • 1 can (15.5 oz.) reduced sodium black beans, drained
  • 1 can (11 oz.) mexicorn, drained
  • 2 tablespoons butter or margarine
  • 1/2 cup salsa
  • 2/3 cup sour cream
  • 1/2 cup shredded cheddar cheese

How To Make mexican beef & corn casserole

  • Step 1
    Preheat oven to 400°
  • Step 2
    Cook ground beef in 12-inch nonstick skillet over medium-high heat, stirring frequently, until beef is done, about 5 minutes. Remove from heat, then stir in cilantro.
  • Step 3
    Combine black beans, corn and butter in 8-inch baking dish. Top with beef mixture; spread with salsa and sour cream and sprinkle with cheese.
  • Step 4
    Bake 20 minutes or until heated though and cheese is melted.
