Ingredients

  • 2 lb
    ground beef
  • 1 large
    onion, chopped
  • 4
    hot chili peppers
  • 8 oz
    cheddar cheese
  • 1 c
    cornmeal
  • 1/2 tsp
    salt
  • 1 tsp
    soda
  • 2
    eggs, beaten
  • 1 c
    buttermilk
  • 1/3 c
    oil
  • 1 can(s)
    cream-style corn

How to Make Mexican Beef Casserole

Step-by-Step

  1. Brown beef; add onions, peppers and cheese.
  2. Sift together meal, salt and soda.
  3. Combine sifted mixture with beaten eggs, buttermilk, oil and corn.
  4. Pour half of the bread mixture in a deep greased skillet or casserole dish.
  5. Add meat mixture and top with remaining bread mixture.
  6. Bake at 350 degrees for 45 minutes.
