mexican bean and beef pie

This is an easy recipe we eat this on nights when we want something different but, don't want tacos.

Ingredients

  • - 1 pound ground round
  • - 3 garlic cloves minced
  • - 1 can undiluted condensed bean with bacon soup
  • - 1 jar medium picante auce
  • - 1/4 cup cornstarch
  • - 1 tablespoon parsley
  • - salt and pepper
  • - 1 can black or kidney beans
  • - 1 can corn drained
  • - 2 cups cheddar cheese
  • - sliced green onions
  • - refrigerated double-crust 9 inch pie crust
  • - sour cream
  • - sliced black olives

How To Make mexican bean and beef pie

  • Step 1
    Cook beef or ground turkey with garlic on skillet until beef is no longer pink then drain. (I usually add my garlic once the beef is starting to brown)
  • Step 2
    In a bowl combine soup, 1-1/4 cups of picante sauce, cornstarch, and parsley. Add salt and pepper to your liking. Add meat.
  • Step 3
    Fold beans and corn into mixture (sometimes I use 1 can of Black Beans and 1 can of corn, I've also made it with no corn using kidney and black beans).
  • Step 4
    Stir in Cheese,and 1/2 cup scallions into the beef and bean mixture. Line pie plate with pie pastry; fill with bean and meat mixture. Top with remaining pastry and seal and flute the edges. Cut slits into the top of the crust.
  • Step 5
    Bake at 425 degrees for 30-35 minutes until lightly browned. Serve with sour cream, picante sauce,green onions and olives.
