This is an easy recipe we eat this on nights when we want something different but, don't want tacos.

  • ·
    1 pound ground round
  • ·
    3 garlic cloves minced
  • ·
    1 can undiluted condensed bean with bacon soup
  • ·
    1 jar medium picante auce
  • ·
    1/4 cup cornstarch
  • ·
    1 tablespoon parsley
  • ·
    salt and pepper
  • ·
    1 can black or kidney beans
  • ·
    1 can corn drained
  • ·
    2 cups cheddar cheese
  • ·
    sliced green onions
  • ·
    refrigerated double-crust 9 inch pie crust
  • ·
    sour cream
  • ·
    sliced black olives

How to Make Mexican Bean and Beef Pie


  1. Cook beef or ground turkey with garlic on skillet until beef is no longer pink then drain. (I usually add my garlic once the beef is starting to brown)
  2. In a bowl combine soup, 1-1/4 cups of picante sauce, cornstarch, and parsley. Add salt and pepper to your liking. Add meat.
  3. Fold beans and corn into mixture (sometimes I use 1 can of Black Beans and 1 can of corn, I've also made it with no corn using kidney and black beans).
  4. Stir in Cheese,and 1/2 cup scallions into the beef and bean mixture. Line pie plate with pie pastry; fill with bean and meat mixture. Top with remaining pastry and seal and flute the edges. Cut slits into the top of the crust.
  5. Bake at 425 degrees for 30-35 minutes until lightly browned. Serve with sour cream, picante sauce,green onions and olives.
