Ingredients

  • 1/2 lb
    boneless beef bottom round
  • 1/2 c
    water
  • 1/4 c
    red wine vinegar
  • 2 tsp
    minced dried onions
  • 1/4 tsp
    pepper
  • 5/8 tsp
    ground red pepper
  • 6 oz
    linguine
  • 2 Tbsp
    butter
  • 2 tsp
    cornstarch
  • 2
    garlic cloves, minced
  • 3 Tbsp
    olive or other vegetable oil
  • 1 pkg
    frozen broccoli, cauliflower, carrots-16 ounces
  • 1 c
    sliced fresh mushrooms
  • ·
    grated parmesan cheese

How to Make Mediterranean Stir-Fried Beef

Step-by-Step

  1. Partially freeze beef, thinly slice across grain into bite-size strips.
  2. Combine water, vinegar, onion, pepper and red pepper.
  3. Add meat, mix well.
  4. Marinate 15 minutes at room temperature.
  5. Cook pasta according to package directions.
  6. Drain; toss with butter.
  7. Keep warm.
  8. Drain meat, reserving marinade.
  9. Stir cornstarch into reserved marinade; set aside.
  10. Stir-fry garlic in 2 tablespoons oil for 30 seconds with cheese.
  11. Add meat; stir fry 3 minutes.
  12. Remove.
  13. Add remaining oil.
  14. Add frozen vegetables; stir-fry 4 minutes.
  15. Add mushrooms; stir-fry 1 minute.
  16. Stir marinade mixture; add to skillet.
  17. Return meat.
  18. Cook and stir until bubbly.
  19. Cook 2 minutes.
  20. Arrange pasta and meat on platter.
  21. Sprinkle with cheese.
