This recipe is awesome for picnics. It is also great served at home. If going to take on a picnic after cooking wrap in foil and several layers of newspaper to keep it warm until ready to eat on your picnic. I pack them in my husbands lunch as he can eat a whole one by himself.

Ingredients

  • 1 pound long loaf sourdough french bread
  • 1 small onion, chpped
  • 1/4 pound mushrooms, sliced
  • 2 tablespoons butter
  • 1 large egg
  • 2 tablespoons ketchup
  • 1 cup shredded sharp cheddar cheese
  • 1/2 cup beef broth
  • 1 teaspoon garlic powder
  • 1/4 teaspoon dried thyme leaves
  • 1 pound lean ground beef

How To Make meaty loaf

  • Step 1
    Cut a thin slice from the top of the loaf. Scoop out most of the bread. Tear to make 1 1/2 c. soft bread crumbs(top slice and remaining bread can be used for another recipe)
  • Step 2
    Brown onion and mushrooms in 1 1/2 T. butter. Beat egg with ketchup. Mix in bread crumbs, 1/2 c. shredded cheese, broth and seasonings. Lightly mix in ground beef and onion mixture.
  • Step 3
    Spoon meat mixture into hollowed out bread. Rub crust with remaining butter. Wrap in foil. Bake at 375^ for 1 hour.
  • Step 4
    Fold back foil and sprinkle with remaining cheddar cheese. Return to oven bake until cheese melts. About 3 minutes.
  • Step 5
    If serving at home cut into slices . If taking on your picnic, tailgate, or other road trip. Wrap in foil and newspaper. Serve when ready by cutting in 4" pieces like a submarine sandwich.
