This recipe makes a large meatloaf that is so tender, juicy and moist with a deep, hearty flavor. You might think of it as just meatloaf, but this one has a great intense beefiness with that special sauce that will separate it from the pack.

Ingredients

MEATLOAF

1 lbchopped meat

2eggs
-
1medium onion, finely chopped

1 Tbspchopped parsley

1 tspsalt

1/4 tsppepper

1/3 coatmeal
-
1/2 - 1 citalian bread crumbs
-
1/2 cfinely shredded carrots
-
1/2 cfinely shredded celery

3 Tbspketchup
-
SAUCE
-
1/3 cketchup
-
1 can(s)beef consomme' soup
-
1/2 tspdried basil
-
1 Tbspcorn starch
-
·several drops of frank's red hot sauce or tabasco hot sauce (optional)
How to Make Meatloaf with a Tomato Beef Sauce
- Mix all meatloaf ingredients together. Shape into loaf and bake at 350 degrees for 1 hour.
- For the sauce, mix ketchup and corn starch together. Then stir in remaining ingredients.
- In microwave safe measuring cup, microwave for 3 minutes. Stir.
- Pour sauce over meatloaf after it has baked for 1 hour. Bake for another 1/2 hour.
