Meatloaf with a Tomato Beef Sauce

My husband and I ate at this little Inn in California and asked what was in the Meatloaf. I experimented on my own and came up with this recipe. I made up the sauce on my own and added it to the meatloaf.

Ingredients

  • 1 lb
    chopped meat
  • 2
    eggs
  • 1
    medium onion, finely chopped
  • 1 Tbsp
    chopped parsley
  • 1 tsp
    salt
  • 1/4 tsp
    pepper
  • 1/3 c
    oatmeal
  • 1/2 - 1 c
    italian bread crumbs
  • 1/2 c
    finely shredded carrots
  • 1/2 c
    finely shredded celery
  • 3 Tbsp
    ketchup
  • SAUCE

  • 1/3 c
    ketchup
  • 1 can(s)
    beef consomme' soup
  • 1/2 tsp
    dried basil
  • 1 Tbsp
    corn starch
  • ·
    several drops of frank's red hot sauce or tabasco hot sauce (optional)

How to Make Meatloaf with a Tomato Beef Sauce

Step-by-Step

  1. Mix all meatloaf ingredients together. Shape into loaf and bake at 350 degrees for 1 hour.
  2. For the sauce, mix ketchup and corn starch together. Then stir in remaining ingredients.
  3. In microwave safe measuring cup, microwave for 3 minutes. Stir.
  4. Pour sauce over meatloaf after it has baked for 1 hour. Bake for another 1/2 hour.
