Ingredients
- 1 teaspoon olive oil
- 1 cup onion, finely chopped
- 1/2 can carrots, finely chopped
- 1 teaspoon oregano
- 2 cloves garlic, minced
- 1 cup tomato sauce
- 1 1/2 pounds ground beef, lean
- 1 cup saltine crackers, finely crushed(about 20)
- 2 - eggs
- 1/2 cup tomato sauce
How To Make meatloaf muffins

Step 1Heat olive oil in skillet over medium-high heat. Add onion, carrot, oregano and garlic. Saute 2 minutes. Cool.

Step 2Combine onion mixture, 1 cup tomato sauce, ground beef, saltines and egg. Mix well.

Step 3Spray 12 muffin cups with cooking spray. Spoon in meat mixture.

Step 4Top each 'muffin' with 2 teaspoons tomato sauce.

Step 5Bake at 350 degrees for 25-30 minutes.
