meatloaf - deliciously moist

This recipe came from a friend of mine. I added my own touch to it...just one of the many meatloaf recipes my family enjoys..This is one of my all time favorites though.. It's been family approved for years. So moist and flavorful, and won't fall apart like some meatloaf does. Hope you try it, you won't be disappointed. Freezes well also. This recipe also makes great burgers..

Ingredients

  • 2 pounds lean ground beef
  • 2 - eggs
  • 1 cup bread crumbs
  • 1/2 cup red bell pepper, diced fine ( i don't always use this)
  • 1 small onion, chopped small (about 1/2 cup)
  • 8 ounces beef broth
  • 1 teaspoon dried sage
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 3 tablespoons brown sugar
  • 1 teaspoon dry mustard
  • 4 tablespoons ketchup

How To Make meatloaf - deliciously moist

  • Step 1
    Preheat oven to 325 degree F. I don't use a loaf pan. I line a sheet pan with foil and shape my loaf. Spray foil with cooking spray.
  • Step 2
    Mix all but the last 3 ingredients well. Shape into loaf. Place in loaf pan or on sheet pan. Bake for 1 hour and 15 minutes.
  • Step 3
    Remove from oven. Mix the last 3 ingredients and spread over meatloaf. Return to oven for another 15 minutes. Let rest for 5 to 10 minutes before cutting. Enjoy!
