My daughters friend found this on Fb. I do not know where originally came from. so I can't give credit where credit is due for the idea. I made my own recipe for the meatloaf, my own loaded mashed potatoes. Decorated it to be my own. I told my son it was his High School Graduation Cake. He was embarrassed because I played a trick on him and put it on his FB page. It was a lot of fun to make. I giggled all the way through making it. It was really good and how you decorate it will be your own one of a kind Meatloaf Cake.

Ingredients For meatloaf "celebration" cake

  • 3 lg
    ground beef
  • 2
    eggs
  • 1/2 c
    panko bread crumbs
  • 2 clove
    garlic. minced
  • 1 md
    onion cut & diced
  • salt & pepper
  • 1/2 c
    bbq sauce
  • 8 slice
    canadian bacon
  • LOADED MASHED POTATOES
  • 6-8
    baking potatoes, diced & cooked till tender
  • 1 c
    sour cream
  • 1 stick
    butter
  • 2
    green onion, diced
  • 1/4 c
    milk
  • garlic powder, dried onion, salt & pepper to taste
  • DECORATIONS
  • 1 can
    grand biscuts
  • 2 c
    shreeded cheddar cheese
  • 1 lb
    baby carrots, cooked with honey & cinnamon in microwave
  • ketchup

How To Make meatloaf "celebration" cake

    Preheat oven two 350F
  • 2
    Mix all ingredients for meatloaf. Divide meat into two 9" cake pans placing the canadian bacon on top evenly. Cook for 30 minutes. Drain off any juice or grease. Place one meatloaf on a round pizza pan.

    Peel and cut potatoes. Place in a lg stock pan. Add salt. Boil till tender. Drain and place in mixer and add all ingredient till potatoes are smooth.

    On the first layer add 1 cup of cheese. Add the other layer on top. Frost the cake with the mashed potatoes. On top. Add the rest of the cheese on top. Make a smiley face with the ketchup. Arrange cooked baby carrots around the sides of the meatloaf.

    Place biscuits around the bottom of the pizza pan and bake for 17 minutes in a 350 oven until biscuits are down.

    Cool slightly...makes cutting easier. Fun for kids, a gag dinner, pot luck or just for fun.
