    mushrooms, drained, liquid reserved, 4 ounces
  • 1 lb
    ground beef
  • 1/2 c
    dry bread crumbs
  • 1
  • 1/4 tsp
    garlic powder
  • 1/2 tsp
  • 4 slice
    bacon, cooked, grease reserved
  • 1 tsp
    dried parsley
  • 1/2 tsp
    dried oregano leaves
  • 1/2 tsp
    basil leaves
  • 1/2 tsp
    thyme leaves
  • 2 Tbsp
    dry bread crumbs
  • 1 small
    onion, diced
  • 1 c
    mozzarella cheese, grated
  • 1 can(s)
    tomato sauce, 15 ounces

How to Make Meatloaf Bracciole


  1. Add water to mushroom liquid to make 1/2 cup.
  2. Combine beef, 1/2 cup breadcrumbs, egg, water, garlic and salt.
  3. Refrigerate.
  4. Crumble bacon.
  5. Mix parsley, oregano, basil, thyme and breadcrumbs.
  6. Pat meat into 12"x8" rectangle on waxed paper.
  7. Drizzle grease on meat.
  8. Sprinkle with herb mixture.
  9. Next sprinkle with bacon, onion, mushrooms and cheese.
  10. Starting with short end, roll meat, jelly-roll fashion, using paper as a guide.
  11. Place seam side down in a 13"x9"x2" baking dish.
  12. Pour tomato sauce over, cover with foil and bake for 50-60 minutes at 350 degrees.
