My sons love to eat these cupcakes for dinner. They are fun for the whole family and can be adapted by making them with ground turkey or chicken and adding other veggies to the mixture.

These meatloaf and mashed potato cupcakes are cute as a button! It's a great way to get kids to eat meatloaf. Individually portioned, the savory meatloaf has bits of cheese. Brushing with a ketchup and mustard glaze adds a touch of sweetness, and it caramelizes while the meatloaf cupcakes bake. Piping creamy mashed potatoes on top as frosting makes these adorable and a little fancy.

Ingredients

  • 1 large egg
  • 3/4 cup milk
  • 3/4 cup quick cooking oats
  • 1/4 cup finely diced onion
  • 1 cup shredded cheddar cheese
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 pound ground beef
  • 2/3 cup ketchup
  • 2 teaspoons mustard
  • 2 tablespoons brown sugar
  • 1 package instant potatoes (Idahoan, 4 oz)
  • 2 tablespoons butter
  • 2 ounces cream cheese

How To Make meatloaf and mashed potato cupcakes

  • Whisk egg and milk.
    Step 1
    Preheat oven to 350 degrees. Crack an egg into a medium bowl and mix in milk, stirring well with a fork.
  • Add oats, onion, cheese, salt, and pepper; mix.
    Step 2
    Add oats, onion, cheese, salt, and pepper, mix well. Then add ground beef and combine.
  • Spray a cupcake tin and place meat into each cup.
    Step 3
    Spray cupcake/muffin tin with nonstick spray and press meat down into each cup. I had exactly enough for 12.
  • Mix ketchup, mustard, and brown sugar and spoon onto each meat cake.
    Step 4
    Mix ketchup, mustard, and brown sugar. Put a spoonful on each meat cake.
  • Bake for 25 minutes.
    Step 5
    Bake for about 25 minutes or until the internal temperature reaches 160 degrees.
  • Prepare mashed potatoes according to package directions.
    Step 6
    While the meat cakes are baking, make the potatoes according to package directions. I used Idahoan roasted garlic flavor and added the butter and cream cheese.
  • Let cool slightly and place in a piping bag.
    Step 7
    Let the mashed potatoes cool slightly. Then, put most of the potatoes into a frosting bag with your favorite decorating tip. If you don't have these, you can put them into a large Ziploc bag and cut off the corner, or put a scoop on with a spoon.
  • Pipe on top of the meatloaf cupcake.
    Step 8
    Add a dollop of mashed potatoes on top of the meat cakes.
