I came up with this recipe because I went over my friends house for dinner one night and she made meat loaf,,,she put cheese and bacon on top of the meat loaf and it was so good. So I figured I could do better by putting cheese inside the meat loaf. So here is my recipe

Ingredients

  • 2-4 pounds ground meat mix,,,beef, pork, veal
  • 1 small green pepper, chop into cubes, big chunks are fine.
  • 1 small onion, chopped
  • 1 package mild cheddar cheese brick, chop cheese into cubes
  • 1 package mozzerella cheese brick, chop cheese into cubes
  • 2 - eggs
  • 1 cup italian seasoned bread crumbs
  • 1-2 pound carrots, washed and peeled

How To Make meatloaf

  • Step 1
    Mix ground meat mix and eggs together, then add in the bread crumbs and Chopped onions mix well.
  • Step 2
    Add in chopped green pepper and cubed cheese's. Shape into meat loaf. I peel up some huge carrots and lay them on the sides of the meat loaf then bake covered 350* for an hour-2 hours check after the first hour. After its cooked through drain the grease then put back in pan and you may put some catsup on top and bake for an extra 10 minutes. If you dont like catsup on top you can put bacon or more cheese on top.
  • Step 3
    Serve with mashed potatoes and creamed peas. To cream peas... melt some butter add in spoon full of flour, mix good then pour in a little milk stir a litte at first then more,,,then heat till thickened then add peas
