meatballs stuffed with pineapple chunks
I was looking through my neighbors microwave cookbook several weeks ago and found this recipe. It looked so good. I usually don't use the microwave for cooking.I mostly use it for heating up things or popcorn. I placed these in my oven at 350 for about 10 minutes or until they looked done. Drained the juices off and added the sauce to them after heating the ingredients in a sauce pan. Turn out great and we all loved them served on a bed of rice or just by themselves. Either way they were all gone.

Ingredients
- 1 - (20 ounce) can pineapple chunks
- 1 pound lean ground beef
- 1 - egg
- 2 slices fresh bread, crumbles
- 1 teaspoon instant minced onion or a tablespoon of fresh onion
- 1 teaspoon salt
- 1/8 teaspoon ground gloves
- 1/8 teaspoon allspice
- 2 tablespoons reserved pineapple syrup
- 1/3 cup resreved pineappe syrup
- 1/2 cup ketchup
- 1/3 cup packed brown sugar
How To Make meatballs stuffed with pineapple chunks

Step 1Drain pineapple well, reserving syrup

Step 2Mix together in a large bowl beef, egg, bread crumbs, onion, salt, cloves, allspice and 2 tablespoons of syrup.

Step 3Mold small amount of mixture around each pineapple chunk.

Step 4Place meatballs in 12 X 8 X 2 glass microwave safe dish.

Step 5Cover with wax paper and microwave at high for 4 minutes.

Step 6Remove from microwave and pour off meat juices.

Step 7Stir together 1/3 cup of reserved syrup, ketchup and brown sugar and mix well.

Step 8Poor over drained meatballs and return to microwave and heat at high for 3 to 5 minutes longer or until done.

Step 9*Serve over cooked rice or noodles or eat plain as finger foods. *Or bake in your oven at 350 as I did until done.
