meatball skillet dinner
I don't know where this recipe came from, but my mother made it when I was growing up. I have added a little kick of heat by adding cayenne, but otherwise it is the same one she made. I serve it over rice or noodles and we love it. It is a quick meal if you have frozen meatballs to use. Frozen meatballs aren't quite the same as the homemade variety, but they work in a pinch.

Ingredients
- 1 - egg
- 1/2 cup milk
- 1 cup soft bread crumbs
- 3 tablespoons grated onion
- 1/2 teaspoon salt
- 1/2 teaspoon dry mustard
- 1/2 teaspoon celery salt
- 1/2 teaspoon pepper
- 1/8 teaspoon freshly grated nutmeg
- 1 pound ground beef
- 1/2 cup all purpose flour
- 2 tablespoons oil
- 1 package (10-oz) mixed vegetables
- 1 cup cream of mushroom soup
- 1 cup milk
- 1/2 teaspoon cayenne

Step 1Beat egg slightly, add milk, bread crumbs, grated onion, salt, dry mustard, celery salt, pepper, nutmeg, and ground beef. Mix thoroughly. Shape into small balls using one teaspoon for each ball. Roll lightly in flour. Brown in oil.

Step 2Push meatballs to outside of skillet and add mixed vegetables. Dilute mushroom soup with milk and add to the meat and vegetables. Add cayenne to taste. Simmer for 10 minutes.

Step 3Serve with rice or egg noodles.
