ground beef
1/4 lb
pork sausage
1/2 tsp
onion salt
1 tsp
chili powder
2 Tbsp
dry bread crumbs, fine
1/4 c
4 Tbsp
all purpose flour
1 Tbsp
16 oz
can stewed tomatoes
10 oz
frozen lima beans, thawed
carrots, peeled, quartered
1 medium
onion, sliced
salt and pepper

How to Make Meatball Bake


  • 1Lightly mix beef, sausage, onion, salt, chili powder, crumbs, milk and egg.
  • 2Shape into 8 2" balls.
  • 3Roll in 2 tablespoons of the flour.
  • 4In large skillet, brown on all sides in the oil (meat should remain rare).
  • 5Transfer meatballs to a shallow 2-quart baking dish.
  • 6Stir remaining flour into drippings in skillet. Add tomatoes.
  • 7Bring to a boil.
  • 8Cook about 10 minutes, stirring, until thickened.
  • 9Distribute the lima beans, carrots and onion in dish with meatballs.
  • 10Sprinkle lightly with salt and pepper.
  • 11Pour tomatoes over top.
  • 12Cover lid or foil.
  • 13Bake at 350 degrees for 1-1/4 hours or until veggies are tender.
  • 14For 8 Servings-Double the ingredients and use a 3-quart casserole.
