  • 1/2 lb
    ground beef
  • 1/4 lb
    pork sausage
  • 1/2 tsp
    onion salt
  • 1 tsp
    chili powder
  • 2 Tbsp
    dry bread crumbs, fine
  • 1/4 c
  • 1
  • 4 Tbsp
    all purpose flour
  • 1 Tbsp
  • 16 oz
    can stewed tomatoes
  • 10 oz
    frozen lima beans, thawed
  • 4
    carrots, peeled, quartered
  • 1 medium
    onion, sliced
  • 1
    salt and pepper

How to Make Meatball Bake


  1. Lightly mix beef, sausage, onion, salt, chili powder, crumbs, milk and egg.
  2. Shape into 8 2" balls.
  3. Roll in 2 tablespoons of the flour.
  4. In large skillet, brown on all sides in the oil (meat should remain rare).
  5. Transfer meatballs to a shallow 2-quart baking dish.
  6. Stir remaining flour into drippings in skillet. Add tomatoes.
  7. Bring to a boil.
  8. Cook about 10 minutes, stirring, until thickened.
  9. Distribute the lima beans, carrots and onion in dish with meatballs.
  10. Sprinkle lightly with salt and pepper.
  11. Pour tomatoes over top.
  12. Cover lid or foil.
  13. Bake at 350 degrees for 1-1/4 hours or until veggies are tender.
  14. For 8 Servings-Double the ingredients and use a 3-quart casserole.
