Ingredients

  • 1/2 pound ground beef
  • 1/4 pound pork sausage
  • 1/2 teaspoon onion salt
  • 1 teaspoon chili powder
  • 2 tablespoons dry bread crumbs, fine
  • 1/4 cup milk
  • 1 egg
  • 4 tablespoons all-purpose flour
  • 1 tablespoon oil
  • 16 ounces can stewed tomatoes
  • 10 ounces frozen lima beans, thawed
  • 4 carrots, peeled, quartered
  • 1 medium onion, sliced
  • 1 salt and pepper

How To Make meatball bake

  • Step 1
    Lightly mix beef, sausage, onion, salt, chili powder, crumbs, milk and egg.
  • Step 2
    Shape into 8 2" balls.
  • Step 3
    Roll in 2 tablespoons of the flour.
  • Step 4
    In large skillet, brown on all sides in the oil (meat should remain rare).
  • Step 5
    Transfer meatballs to a shallow 2-quart baking dish.
  • Step 6
    Stir remaining flour into drippings in skillet. Add tomatoes.
  • Step 7
    Bring to a boil.
  • Step 8
    Cook about 10 minutes, stirring, until thickened.
  • Step 9
    Distribute the lima beans, carrots and onion in dish with meatballs.
  • Step 10
    Sprinkle lightly with salt and pepper.
  • Step 11
    Pour tomatoes over top.
  • Step 12
    Cover lid or foil.
  • Step 13
    Bake at 350 degrees for 1-1/4 hours or until veggies are tender.
  • Step 14
    For 8 Servings-Double the ingredients and use a 3-quart casserole.
