Meat Loaf with a Heart of Gold (TNT)

Lynnda Cloutier

So easy and so good. I've made this many times, and it's always a hit. You get your meat and veggies in one serving. Instead of the catsup, you can substitute barbecue sauce.

1 1/2 lbs. ground beef
1 1/2 t. salt
1/2 t. pepper
pinch thyme
1/2 cup cracker crumbs (or bread crumbs)
1/2 cup finely chopped onion
2/3 cup milk
1 can corn (12 oz)
1/2 cup grated cheddar cheese
1/4 cup catsup
parsley for garnish

1Mix beef, salt, pepper, thyme, cracker crumbs, onion and milk. Mix until
2Put meat mixture on waxed paper, pat it out into a 12" square
corn of all liquid. Mix cheese with corn and spread it over meat mixture up
to one inch of edge. Roll like a jelly roll, lifting wax paper to roll meat
over. Seal edges by pressing meat firmly together. Place in open roasting
pan and bake in a preheated 375 oven for 30 minutes. Brush catsup over loaf
and bake another 30 minutes. Let sit for about 12 minutes for easier
slicing. Serves 6
