meat loaf with a heart of gold (tnt)
So easy and so good. I've made this many times, and it's always a hit. You get your meat and veggies in one serving. Instead of the catsup, you can substitute barbecue sauce.

Ingredients
- - 1 1/2 lbs. ground beef
- - 1 1/2 t. salt
- - 1/2 t. pepper
- - pinch thyme
- - 1/2 cup cracker crumbs (or bread crumbs)
- - 1/2 cup finely chopped onion
- - 2/3 cup milk
- - 1 can corn (12 oz)
- - 1/2 cup grated cheddar cheese
- - 1/4 cup catsup
- - parsley for garnish
How To Make meat loaf with a heart of gold (tnt)

Step 1Mix beef, salt, pepper, thyme, cracker crumbs, onion and milk. Mix until smooth.

Step 2Put meat mixture on waxed paper, pat it out into a 12" square

Step 3Drain corn of all liquid. Mix cheese with corn and spread it over meat mixture up to one inch of edge. Roll like a jelly roll, lifting wax paper to roll meat over. Seal edges by pressing meat firmly together. Place in open roasting pan and bake in a preheated 375 oven for 30 minutes. Brush catsup over loaf and bake another 30 minutes. Let sit for about 12 minutes for easier slicing. Serves 6 Source: My Old Recipes
