So easy and so good. I've made this many times, and it's always a hit. You get your meat and veggies in one serving. Instead of the catsup, you can substitute barbecue sauce.

Ingredients

  • - 1 1/2 lbs. ground beef
  • - 1 1/2 t. salt
  • - 1/2 t. pepper
  • - pinch thyme
  • - 1/2 cup cracker crumbs (or bread crumbs)
  • - 1/2 cup finely chopped onion
  • - 2/3 cup milk
  • - 1 can corn (12 oz)
  • - 1/2 cup grated cheddar cheese
  • - 1/4 cup catsup
  • - parsley for garnish

How To Make meat loaf with a heart of gold (tnt)

  • Step 1
    Mix beef, salt, pepper, thyme, cracker crumbs, onion and milk. Mix until smooth.
  • Step 2
    Put meat mixture on waxed paper, pat it out into a 12" square
  • Step 3
    Drain corn of all liquid. Mix cheese with corn and spread it over meat mixture up to one inch of edge. Roll like a jelly roll, lifting wax paper to roll meat over. Seal edges by pressing meat firmly together. Place in open roasting pan and bake in a preheated 375 oven for 30 minutes. Brush catsup over loaf and bake another 30 minutes. Let sit for about 12 minutes for easier slicing. Serves 6 Source: My Old Recipes
