Ingredients

  • 1 Tbsp
    vegetable oil
  • 1 large
    baking potato, peeled, cut into 1/2" cubes
  • 2 medium
    carrots, peeled and thinly sliced
  • 1 medium
    onion, halved, sliced
  • 2/3 c
    beef broth
  • 1 tsp
    salt, divided
  • 1 lb
    lean ground beef
  • 1 large
    clove garlic, minced
  • 1 Tbsp
    dried parsley
  • 1 tsp
    paprika
  • 1/2 tsp
    ground cinnamon
  • 1/2 tsp
    ground cumin
  • 1/4 tsp
    pepper

How to Make Meat and Potato Stir-Fry

Step-by-Step

  1. Heat oil in a wok or large skillet over medium-high heat until hot.
  2. Add potato, carrots and onion; cook and stir 3 minutes.
  3. Stir in broth and 1/2 teaspoon salt.
  4. Reduce heat to medium.
  5. Cover and cook 6 to 7 minutes more or until potato is tender, stirring once or twice.
  6. Remove vegetables from wok; set aside.
  7. Wipe out wok with paper towel.
  8. Heat wok over medium-high heat until hot.
  9. Add beef and garlic; stir-fry 3 minutes or until meat is no longer pink.
  10. Add parsley, paprika, cinnamon, cumin, remaining 1/2 teaspoon salt and pepper; cook and stir 1 minutes.
  11. Add vegetables; heat through.
