mary's mmmmm meatloaf
This is the best meatloaf; I hope you agree. You can spice it up with green chilies or chopped jalapeno. I usually double the recipe and put one (uncooked) in the freezer for later.

Ingredients
- 1 large egg
- 8 ounces tomato sauce
- 1/2 tablespoon garlic powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 4 slices American cheese, cut into small pieces
- 1/2 medium onion, chopped
- 1/2 medium bell pepper, chopped
- 1/2 - sleeve Ritz crackers, crushed (do not substitute)
- 1 1/2 pounds lean ground beef, grass-fed preferred
- 1/2 cup ketchup
- 1/4 cup brown sugar
- 1 teaspoon yellow mustard
How To Make mary's mmmmm meatloaf

Step 1Preheat oven to 350 degrees F. Beat egg. Blend in the tomato sauce, garlic powder, salt, and pepper.

Step 2Add diced cheese.

Step 3Add chopped onion, bell pepper, and crackers.

Step 4Mix in ground beef. Thoroughly squish ingredients with your hands (yes, it is messy). If you don't want to get your hands messy it can be put in a food processor and mix.

Step 5Spread in a 1 1/2 quart baking dish. Bake in the preheated oven covered for 1 hour.

Step 6Mix the ketchup, brown sugar, and yellow mustard for the glaze.

Step 7Remove the meatloaf from the oven. Use paper towels to drain off the fat.

Step 8Poke holes in the top.

Step 9Pour the glaze on top. Return to oven and bake uncovered for another 30 minutes.
