This is the best meatloaf; I hope you agree. You can spice it up with green chilies or chopped jalapeno. I usually double the recipe and put one (uncooked) in the freezer for later.

Is there anything more comforting than a classic meatloaf? This recipe is full of flavor from the onions and bell peppers. The sweet sauce on top balances the savoriness of the ground beef. Serve with mashed potatoes and a veggie for an easy weeknight dinner.

  • 1 lg

  • 8 oz
    tomato sauce
  • 1/2 Tbsp
    garlic powder
  • 1 tsp
    salt
  • 1/2 tsp
    black pepper
  • 4 slice
    American cheese, cut into small pieces
  • 1/2 md
    onion, chopped
  • 1/2 md
    bell pepper, chopped
  • 1/2
    sleeve Ritz crackers, crushed (do not substitute)
  • 1 1/2 lb
    lean ground beef, grass-fed preferred
  • 1/2 c
    ketchup
  • 1/4 c
    brown sugar
  • 1 tsp
    yellow mustard

How To Make mary's mmmmm meatloaf

  • Combine egg, tomato sauce, and garlic salt.

    Preheat oven to 350 degrees F. Beat egg. Blend in the tomato sauce, garlic powder, salt, and pepper.
  • Add diced American cheese,

    Mix in ground beef. Thoroughly squish ingredients with your hands (yes, it is messy). If you don't want to get your hands messy it can be put in a food processor and mix.
  • Spread into a baking dish and bake.

    Spread in a 1 1/2 quart baking dish. Bake in the preheated oven covered for 1 hour.
  • Mix brown sugar, yellow mustard, and ketchup.

  • Drain fat from the meatloaf.

    Remove the meatloaf from the oven. Use paper towels to drain off the fat.
  • Poke holes in the meatloaf.
