mary's meatloaf-stuffed peppers
My daughter-in-law makes the moistest, most wonderful meatloaf in the world. This is her recipe adapted to fit into peppers. You can also make the meatloaf by itself. Just pat into a loaf pan and bake for 1 hour 10 minutes, or just until done in the center and slice. It's just delicious and is even better cold in a sandwich days later-thanks, Mary!

Ingredients
- 4 large green bell peppers
- MEATLOAF MIXTURE
- 1 pound lean ground beef
- 1 pound ground pork
- 1 medium onion, chopped
- 2 large eggs
- 3 garlic cloves, minced
- 3 tablespoons ketchup
- 3/4 cup panko bread crumbs
- 1/3 cup milk
- 2 teaspoons dried italian seasoning
- 1 teaspoon black pepper
- 1/2 teaspoon paprika
- SAUCE
- 1 cup ketchup
- 2 teaspoons white vinegar
- 2 tablespoons brown sugar
- 1 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon black pepper
How To Make mary's meatloaf-stuffed peppers

Step 1Preheat oven to 375 degrees. Spray a 9x13-inch baking dish with nonstick cooking spray or line with parchment paper.

Step 2Mix meatloaf ingredients in a large bowl with hands, just until combined completely; Don't overmix.

Step 3Bake 40 minutes, uncovered. Remove from oven, uncover.

Step 4Mix sauce ingredients in medium bowl and pour/spread over tops of stuffed peppers. Bake, uncovered, an additional 20 minutes. Allow to rest in pan 10 minutes before serving.
