I have to give my husband credit for this recipe. He ate some meatloaf at a roadside diner that he really enjoyed. It had very small diced potatoes in it and they served it with gravy on top. He came to the conclusion that the small potatoes came from corned beef hash. So the next time I made meatloaf, I added corned beef hash to my recipe and instead of ketchup, brown gravy was the topping. It was awesome! We always use the excess gravy for mashed potatoes on the side.

brown gravy mix

How to Make Marvelous Meat Loaf


  • 1Preheat oven to 350 degrees.
  • 2Wet hamburger buns with water, then squeeze out excess.
  • 3Dice onion.
  • 4Mix hamburger, corned beef hash, eggs, wet buns, onion, salt, and pepper.
  • 5Bake in 9 x 13 casserole dish for 1 hour.
  • 6Drain excess grease.
  • 7Prepare gravy according to package directions and pour over meat loaf.
  • 8Bake for 15 minutes.
