I make this great recipe quite often for my husband. He loves it as do I. This recipe comes from "Mabel Hoffman's Crockery Cookbook" a real gem. Quick to prepare and worry free when cooking while you are at work or shopping for the day. You could also serve it with a nice side salad and crusty bread/buns to complete the meal. I do hope you will give this recipe a go. It is easy to prepare, and delicious to eat. Enjoy won't you!

Ingredients

  • - 4 lbs lean beef short ribs (i use 3 lbs)
  • - 1 large tomato, chopped
  • - 1 cup of beef broth
  • - 1/4 cup red wine
  • - 1 small oniion sliced
  • - 2 tbsp prepared horseradish
  • - 1 tsp salt (i use 1/2 tsp)
  • - 1/4 tsp pepper
  • - 1/2 tsp ground ginger
  • - 3 tbsp cornstarch
  • - 3 tbsp of water

How To Make marco polo short ribs

  • Step 1
    In a slow cooker, combine ribs, tomato, broth, wine, onion, horseradish, salt, pepper and ginger
  • Step 2
    Cover and cook on LOW for 6-7 hours. ( I cook mine for 8 hrs)
  • Step 3
    Remove meat from cooker, cover, and keep warm
  • Step 4
    Turn control to HIGH. Dissolve cornstarch in water in a small bowl. Stir cornstarch mixture into cooker
  • Step 5
    Cover and cook on HIGH 15-20 minutes or until sauce is thickened
  • Step 6
    Spoon sauce over meat
  • Step 7
    Serve with rice pilaf or potatoes and vegetables (optional)
