marcia's baked spinach manicotti

This recipe was given to me by a wonderful Friend. I added a few embellishments, but she deserves all the credit.

Ingredients

  • 12 crepes or you can use manicotti shells
  • 1/2 stick butter
  • 1/2 cup onion, minced
  • 1 clove garlic, pressed or minced
  • 1 pound lean ground beef
  • 1 package 10 oz. pkg. frozen chopped spinach, thawed and drained well
  • 1/2 cup ricotta cheese
  • 2 eggs, lightly beaten
  • 1 teaspoon salt
  • SAUCE
  • 1/4 cup butter
  • 1 1/2 teaspoons chicken bouillon or chicken stock base
  • 1/4 cup all purpose flour
  • 1 1/2 cups milk
  • 1/4 cup parsley, chopped fine
  • 1 jar 15-oz. jar spaghetti sauce with mushrooms
  • 2 teaspoons finely chopped basil leaves
  • parmesan cheese for topping

How To Make marcia's baked spinach manicotti

  • Step 1
    Prepare manicotti shells according to package instructions or use a basic crepe mix to prepare crepes.
  • Step 2
    Melt butter in a skillet and add onion and garlic - cooking until onion is transparent. Add ground beef and cook through. Remove pan from heat.
  • Step 3
    In a bowl, combine thoroughly drained spinach, ricotta cheese, eggs and salt. Combine with drained ground beef and mix well. Fill each manicotti shell or crepe with approx. 1/4 cup filling. Place them in a 3 qt. prepared baking dish.
  • Step 4
    To prepare sauce - melt butter and blend in flour and chicken stock base. Remove from heat and stir in milk and return to stove top - bring to a boil - stirring constantly - approx. 1 minute. Add parsley. Pour mixture over manicotti.
  • Step 5
    Combine spaghetti sauce and basil. Pour over sauce. Sprinkle with parmesan cheese on top and bake at 350 degrees for 30 minutes.
