marcia's baked spinach manicotti
This recipe was given to me by a wonderful Friend. I added a few embellishments, but she deserves all the credit.

Ingredients
- 12 crepes or you can use manicotti shells
- 1/2 stick butter
- 1/2 cup onion, minced
- 1 clove garlic, pressed or minced
- 1 pound lean ground beef
- 1 package 10 oz. pkg. frozen chopped spinach, thawed and drained well
- 1/2 cup ricotta cheese
- 2 eggs, lightly beaten
- 1 teaspoon salt
- SAUCE
- 1/4 cup butter
- 1 1/2 teaspoons chicken bouillon or chicken stock base
- 1/4 cup all purpose flour
- 1 1/2 cups milk
- 1/4 cup parsley, chopped fine
- 1 jar 15-oz. jar spaghetti sauce with mushrooms
- 2 teaspoons finely chopped basil leaves
- parmesan cheese for topping
How To Make marcia's baked spinach manicotti

Step 1Prepare manicotti shells according to package instructions or use a basic crepe mix to prepare crepes.

Step 2Melt butter in a skillet and add onion and garlic - cooking until onion is transparent. Add ground beef and cook through. Remove pan from heat.

Step 3In a bowl, combine thoroughly drained spinach, ricotta cheese, eggs and salt. Combine with drained ground beef and mix well. Fill each manicotti shell or crepe with approx. 1/4 cup filling. Place them in a 3 qt. prepared baking dish.

Step 4To prepare sauce - melt butter and blend in flour and chicken stock base. Remove from heat and stir in milk and return to stove top - bring to a boil - stirring constantly - approx. 1 minute. Add parsley. Pour mixture over manicotti.

Step 5Combine spaghetti sauce and basil. Pour over sauce. Sprinkle with parmesan cheese on top and bake at 350 degrees for 30 minutes.
