mama cindy's super simple meatloaf
Thirty years ago, when my husband and I were first married, a traveling salesman came to our door, selling encyclopedias. With our purchase, we received a giant cookbook with hundreds of all-American and international recipes. Even with its broken binding and stained pages, we still refer to the old cookbook today! Although my meatloaf recipe has morphed just slightly from the book's version, I still use the original key ingredients to give it a sweet and savory flair -- sweet pickle juice and brown sugar. This is a super simple recipe, and it makes for great comfort food. Enjoy!

Ingredients
- 1 pound lean ground beef, preferably grass-fed
- 1 - egg, farm fresh
- 2 tablespoons sweet pickle juice
- 3 tablespoons ketchup
- 1/2 cup italian bread crumbs
- 2 pinches salt
- 2 pinches pepper, ground black
- 3-4 tablespoons ketchup
- 2-3 tablespoons brown sugar
How To Make mama cindy's super simple meatloaf

Step 1In a bowl, add ground beef, egg, pickle juice, ketchup, bread crumbs, salt and pepper. With clean hands, dig in and knead ingredients, mixing them well through the beef.

Step 2Form the ground beef into a small loaf, and place into a loaf pan. Using a spoon or fork, make an indented area along the top of the loaf.

Step 3In a separate bowl, add the remaining ketchup and brown sugar. Mix it well to make a sauce, breaking up any chunks of brown sugar.

Step 4With a spoon, spread the "sauce" over the top of the meatloaf. Bake at 375 for 45 to 50 minutes. Serve with organic green beans and baked potato for a hearty and satisfying meal!
