I have two male roommates that live with me. They always ask for me to cook them up a casserole or something that will last them the week. This time round they requested meatloaf. I was up for the challenge. Of course, I wanted to make it as tasty and slightly un-traditional. I put this recipe together based off what I had in my kitchen that sounded good. It was so good that even those who claim to not like meatloaf want more of this one.

How to Make Magnificent Meatloaf

Step-by-Step

  • 1Preheat oven to 350 degrees.
Place meat in a large bowl, set aside.
  • 2Using a blender or food processor, finely chop the zucchini, carrot and apple. Add to meat.
  • 3Also add to the meat the celery, onion, bread crumbs, egg, worcestershire sauce, garlic, parsley, basil, garam masala, and a 1/2 cup of the tomato sauce. Blend well....don't be afraid to get you hands in there and mix it up thoroughly.
  • 4Transfer meat to a 9x12 casserole dish and form a large rectangle, leaving approximately 1-2 inches around all sides.
  • 5Bake for 45 minutes. Remove from oven, and top with remaining sauce and cheese. Bake for 10 minutes more.
Remove from oven and let sit for 10-15 minutes before serving.

Tip: If too juicy, I like to remove the extra juices using a spoon or suction.
