magnificent meatloaf

I have two male roommates that live with me. They always ask for me to cook them up a casserole or something that will last them the week. This time round they requested meatloaf. I was up for the challenge. Of course, I wanted to make it as tasty and slightly un-traditional. I put this recipe together based off what I had in my kitchen that sounded good. It was so good that even those who claim to not like meatloaf want more of this one.

Ingredients

  • 1 1/2 pounds ground beef and/or ground sirloin
  • 2 - carrots
  • 1 - zucchini
  • 1/2 - apple, cored
  • 1/4 cup onion, chopped
  • 1/4 cup celery, chopped
  • 1/2 cup bread crumbs
  • 1 - egg
  • 2 teaspoons worcestershire sauce
  • 1 teaspoon garlic, crushed or minced
  • 1 teaspoon parsley flakes
  • 1 teaspoon basil, dried
  • 1 teaspoon garam masala spice
  • 1 1/2 cups tomato sauce, divided
  • 1/2 cup cheddar/jack cheese

How To Make magnificent meatloaf

  • Step 1
    Preheat oven to 350 degrees. Place meat in a large bowl, set aside.
  • Step 2
    Using a blender or food processor, finely chop the zucchini, carrot and apple. Add to meat.
  • Step 3
    Also add to the meat the celery, onion, bread crumbs, egg, worcestershire sauce, garlic, parsley, basil, garam masala, and a 1/2 cup of the tomato sauce. Blend well....don't be afraid to get you hands in there and mix it up thoroughly.
  • Step 4
    Transfer meat to a 9x12 casserole dish and form a large rectangle, leaving approximately 1-2 inches around all sides.
  • Step 5
    Bake for 45 minutes. Remove from oven, and top with remaining sauce and cheese. Bake for 10 minutes more. Remove from oven and let sit for 10-15 minutes before serving. Tip: If too juicy, I like to remove the extra juices using a spoon or suction.
