madeleine's italian spinach meat balls

When my daughter was little, getting her to eat spinach or most other veggies was difficult, so this recipe helped. Now she is a vegetarian, we can't use the meat! Mom's recipe is nice and juicy, and you will love it.

Ingredients For madeleine's italian spinach meat balls

  • 10 oz
    chopped frozen spinach
  • 1
    egg
  • 1 1/2 lb
    ground round
  • 2 Tbsp
    fresh bread crumbs
  • 2 Tbsp
    romano cheese, grated
  • 1/4 tsp
    pepper
  • 1/4 tsp
    oregano
  • 1 tsp
    salt
  • 1 clove
    garlic, crushed
  • 1/3 c
    oil

How To Make madeleine's italian spinach meat balls

  • 1
    Cook spinach to package directions, drain thoroughly. Mix with all but oil. Form into 1" balls. Brown on all sides, cover and simmer 15 min.
