lizzy's stuffed green peppers

I remember standing on a chair learning to stir the pot as my grandmother instructed me in culinary arts. I was very fortunate to be the granddaughter of restaurateurs! For over 50 years I've been using the techniques my wonderful grandparents have taught me. The other day I created this recipe - I just threw together things I had in the cabinet and refrigerator. I have to say that these were the best stuffed peppers that I've ever eaten. I actually called my husband to see when he was coming home for dinner and decided to eat before he arrived. The aroma and flavor were amazing!

Ingredients

  • 1 1/2 pounds lean ground beef
  • 1 - onion
  • 6 to 8 - peppers
  • 1/2 can stewed tomatoes
  • 3 tablespoons ketchup
  • 1 teaspoon greek seasoning
  • 1 teaspoon basil
  • 1 teaspoon oregano
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 - egg
  • 1 - carrot
  • 1/2 - red pepper
  • 1/2 - yellow pepper
  • 1/2 - orange pepper
  • 1/2 - green pepper
  • 2 - stalks of celery
  • 1 - zuccini
  • - olive oil
  • - salt & pepper
  • 1 cup rice
  • 1 - cube chicken boullion
  • 2 cups water
  • - ketchup for glazing

How To Make lizzy's stuffed green peppers

  • Step 1
    Preheat oven to 350 degrees.
  • Step 2
    Chop onion and saute in olive oil. Add rice, water and chicken boullion cube. Sprinkle with salt & pepper to taste. Cook till rice is tender. Then take off heat to let cool.
  • Step 3
    While rice is cooking, in a large bowl pace ground beef.
  • Step 4
    Chop zucchini, carrot, 1/2 red pepper, 1/2 yellow pepper, 1/2 red pepper, 1/2 green pepper and celery stalks. Add chopped vegetables to meat.
  • Step 5
    Sprinkle meat and vegetables with the garlic powder, onion powder, oregano and basil. Add ketchup and cooled rice. Mix ingredients thoroughly and set bowl aside.
  • Step 6
    Take 6 peppers and chop off the tops. Stuff peppers with the meat mixture. Glaze top of stuffed peppers with ketchup. Place in a 9 x 13 baking pan. Add 1/2 inch water to baking dish. Bake for 1 1/2 to 2 hours.
