My German mother taught me this recipe. Even people who hate liver will like this. My husband and daughter hate liver, but beg me to make this often. My daughters fiance tried this for the first time a couple of months ago and loved it. He still doesn't know it has liver in it!!

Ingredients
- 1 pound lean ground beef (93/7)
- 1 package frozen beef liver thawed (usually 4 slices to a package)
- 1/2 cup parsley
- 1 medium onion
- 1 - egg
- 1/4 - 1/2 cup all purpose flour
- 1 package bacon chopped and cooked til crisp, do not drain
- 2 teaspoons salt
- 2 teaspoons pepper
How To Make liver dumplings

Step 1Chop and cook bacon until crisp. Do not drain drippings, keep warm. Bring to a boil a large pot of water.

Step 2In food processor, combine ground beef, liver, onion, parsley and egg. Add salt and pepper. Add flour until mixture comes together. You will need to make several batches. Do not boil all of the dumpling mixture at once. Drop by rounded spoonfuls into salted boiling water. Cook for 15 minutes. Check one dumpling to be sure it is no longer pink in the middle.

Step 3With a slotted spoon scoop dumplings out of water and place into a large bowl. Pour hot bacon drippings over dumplings. Serve with boiled potatoes and sauerkraut. ENJOY!!
