liver and onions
I know that a lot of people don't care for liver and I have to admit we go through spurts on having it. But when we do, this is our favorite recipe.

Ingredients
- 1 1/2 pounds liver
- 1/4 cup flour
- 3 slices bacon, halved
- 1/2 cup onion, sliced
- 3/4 - beef broth, diluted
- 1/8 teaspoon pepper
- 1/8 teaspoon tarragon
How To Make liver and onions

Step 1Coat liver with flour; set aside.

Step 2Brown bacon; drain on paper towels.

Step 3Brown onions in drippings.

Step 4Brown liver quickly in same skillet, about 1 minute on each side.

Step 5Drain fat.

Step 6Combine broth, liver, pepper and tarragon.

Step 7Cover and simmer 20 minutes until liver is fork tender.

Step 8Uncover; top with bacon.

Step 9Simmer uncovered 5 to 10 minutes until sauce is consistency of gravy.
