I got this recipe from a friend of mine. It's one of my favorites.

These little cheddar meatloaves are pure genius! Making individual loaves makes for easy serving and everyone can enjoy a personal mini meatloaf. Fresh onions add a nice flavor and there's just enough salt and bits of gooey cheese from shredded cheddar. On top is a sweet glaze to contrast the savory meatloaf. This is a quick and easy weeknight meal.

Ingredients
- 1 large egg
- 3/4 cup milk
- 1 pound lean ground beef
- 1 cup shredded cheddar cheese
- 1/2 cup quick-cooking oats
- 1/2 cup chopped onions
- 1 teaspoon salt
- 2/3 cup ketchup
- 1/2 cup brown sugar or to taste
- 1 1/2 teaspoons yellow mustard

Note that the glaze is quite sweet, so if you don't like things sweet cut back on the brown sugar in the glaze.

Step 1Preheat oven to 350 degrees F. Mix egg and milk in a bowl. Add beef, cheddar cheese, oats, onions, and salt.

Step 2Form 8 small loaves on a baking sheet.

Step 3Combine ketchup, brown sugar, and mustard.

Step 4Pour over each meatloaf.

Step 5Bake at 350 degrees for 45 minutes.
