These were really cute and my family enjoyed having their own mini meatloaf. The recipe has a really good contrast of savory meatloaf and sweet glaze. And of course, the cheese added to these little loaves is a nice touch.

Ingredients For little cheddar meatloaves

  • 1
    egg
  • 3/4 c
    milk
  • 1 c
    cheddar cheese, shredded
  • 1/2 c
    quick cooking oats, dry
  • 1/2 c
    onions, chopped
  • 1 tsp
    salt
  • 1 lb
    lean ground beef
  • GLAZE
  • 2/3 c
    ketchup
  • 1/2 c
    brown sugar
  • 1 1/2 tsp
    regular mustard

Note that the glaze is quite sweet, so if you don't like things really sweet you may want to either cut back on the brown sugar in the glaze or leave the glaze off altogether. Wonderful either way.

    Mix egg and milk together and beat in bowl.

    Mix all ingredients and form 8 small loaves.
  • 3
    Combine ketchup, brown sugar and mustard, and pour over each meat loaf.

    Bake at 350°F for 45 minutes.
