lin's chili
DH always use to make us a great chili,but he has 'given up' on cooking,due to all my health issues. Now I have kinda taken over. I was trying for all healthy, but he only eats what looks like what he is used to. This was not one of my healthy recipes! But it turned out really tasty! Note: I have used what was left in house. No other items were available ....I have made this recipe with ground turkey and it tastes just as good.

Ingredients
- 1/2 cup tomato paste, italian
- 1 pound lean ground beef
- 1 can red chili beans,undrained
- 1 medium sweet onion,diced
- 1/2 cup sweet red/yellow/green peppers,each diced
- 1/2 cup ketchup
- 1/2 cup v8 juice
- 1 small garden tomato,diced
- 1 package chili seasoning
- 2 dashes hot sauce
- 1/2 teaspoon cumin/celery salt/thyme/garlic powder
- 1/4 teaspoon basil/oregano/black pepper
- 1 cup vegetable stock
How To Make lin's chili

Step 1Saute onion & peppers in large, deep pan,with drizzle of olive/canola oil, 'til golden

Step 2Crumble ground beef into the veggies,and saute 'til cooked with no pink left in meat

Step 3Add all other ingredients and simmer slowly covered, for 1 hour, adding 1/4 cup water when needed

Step 4Serve alone, with rice, or as topping for franks, or "Sloppy Joes" Add grated cheese on top.
