  • 2 lb
    beef cubes
  • 2 c
    carrots, sliced or baby carrots
  • 2 c
    potatoes, cut into chunks
  • 2
    medium onions, chopped
  • 1 c
    celery, chopped
  • 1-1/2 c
    green beans or 1 (10 ounces) pkge. lima beans
  • 2 tsp
    quick cooking tapioca
  • 1 tsp
  • 1/2 tsp
  • 1 can(s)
    (8 ounces) tomato sauce
  • 1 c
  • 1 Tbsp
    brown sugar

How to Make Lazy Day Stew


  1. Place beef cubes in a single layer in a 2-1/2 quart casserole or roast pan.
    Add vegetables.
    Sprinkle tapioca, salt and pepper over top.
    Pour tomato sauce mixed with water over vegetables and seasonings.
    Crumble brown sugar over all.
  2. Cover tightly and bake at 325 degrees for 3 hours.
  3. SLOW COOKER: Place beef in bottom of slow cooker.
    Add vegetables.
    Sprinkle tapioca, salt and pepper over ingredients.
    Mix tomato sauce and water. Pour over top.
    Sprinkle brown sugar over all.
    Cover. Cook on low 8 hours.
