Ingredients
- 1 pound ground beef (or turkey)
- 1/2 cup chopped onion
- 2 medium cloves garlic, minced
- 1 jar 26-oz jar marinara sauce, divided
- 1 package cottage cheese
- 1 package 10-oz pkg frozen, chopped spinach, thawed and squeezed
- 1 1/2 cups sliced mushrooms
- l package 12-oz pkg shredded mozzarella, divided
- 1/2 cup grated parmesan cheese, divided
- 2 medium eggs, beaten
- 9 - lasagna noodles, cooked (or no bake)
- - oil for sauteeing meat and onions. butter or oil for sauteeing mushrooms
How To Make lasagna florentine

Step 1Brown beef, onion and garlic in a skillet over medium heat, drain well. In a separate skillet, saute mushrooms until the moisture has cooked out and mushrooms are fully cooked. Add to beef mixture. Add marinara sauce, stir to combine, and set aside.

Step 2In a large bowl, combine cottage cheese, spinach, 2 cups mozzarella cheese, 1/4 cup parmesan cheese and eggs.

Step 3In an ungreased 9 x 13 inch baking pan, layer one cup sauce mixture, 3 lasagna noodles, and 1/2 cup cottage cheese mixture. Repeat layers once more.

Step 4Top with 3 remaining noodles , sauce mixture, mozzarella cheese and parmesan cheese. Cover with a sheet of parchment paper, top with aluminum foil. Bake at 350 degrees for 30 minutes. Uncover; bake for an additional 15 minutes or until noodles are tender. Let stand 10 minutes before slicing.
