I make this dish when I already have cooked rice in the refrigerator. Prep time then is only about 5 minutes. Another FAST FAST FAST answer to "what's for dinner?"

Ingredients

  • 1 lb
    ground beef
  • 1 c
    brown rice, raw
  • 1 can(s)
    tomatoes, canned and chopped, with liquid
  • 1 can(s)
    black beans
  • 1 pkg
    taco mix
  • 1 c
    cheddar cheese, shredded
  • ·
    salt & pepper
  • 2
    green bell pepper, diced

How to Make Kitty's Green Pepper Casserole

Step-by-Step

  1. Cook rice according to package directions - Can be made a day ahead and refrigerated
  2. Brown hamburger and onions
  3. Stir in taco mix, tomatoes and green pepper till peppers are slightly tender. Do not over cook
  4. Add black beans and stir occasionally till heated beans are hot
  5. Place in microwave safe serving dish rice first, beans & meat mixture on top, and sprinkle with cheese
  6. Microwave on high 45 seconds or until cheese melts
