kitty's chinese casserole
Decades ago a recipe for this casserole was passed around the neighborhood and everyone on our street loved it. I lost the recipe and just recently spent some time making up this new one. If I could ever find the original I think mine would still make the grade. It passed the husband test and the brother in law test!

This is a simple, economical casserole that is full of flavor. The fresh vegetables not only add texture but so much flavor. The mixture of sauces adds savoriness to this dish. The soups mixed with the rice makes and the chow mein noodles on top add a wonderful crunch. This casserole should be a staple in everyone's recipe box for those busy weeknights.

Ingredients
- 1 pound ground beef
- 1 cup white onion, chopped
- 2 - 1/2 cups fresh mushrooms, sliced or quartered
- 1 cup celery, chopped
- 1 cup rice, uncooked (white)
- 1 can cream of chicken soup
- 1 can cream of mushroom soup
- 2 cups water
- 1 tablespoon Worcestershire sauce
- 1 teaspoon soy sauce
- 1/2 teaspoon white pepper
- 1 1/2 cups chow mein noodles
How To Make kitty's chinese casserole

Step 1In a large skillet brown ground beef and onion and drain off access grease if necessary. Lean ground beef will not have grease.

Step 2In a large mixing bowl combine ground beef and all other ingredients except chow mein noodles.

Step 3Pour mixture into large casserole dish or oblong baking bakeware sprayed with non-stick cooking spray. Cover with foil.

Step 4Bake for 50 min at 350 degrees.

Step 5Remove from oven and top with chow mein noodles.

Step 6Return to oven for additional 10 minutes or until noodles are warm and slightly browned. Variations on this recipe would include using brown rice rather than white and instead of ground beef substitute chicken.
