I found a recipe for a chinese casserole like my mom had made. I was so hungry for it that I went searching for her recipe. Here it is! I hope you enjoy it as much as I do!

Ingredients
- 2 pounds very lean ground beef
- 1 large sweet onion - chopped
- 2 cups celery - sliced
- 2 cans cream of mushroom soup
- 3 cups cooked rice (this is about equal to 1 1/2 cups uncooked rice)
- 1/2 cup soy sauce
- 2 cans sliced water chestnuts - drained
- 1 package chow mein noodles
How To Make karen's chinese caserole

Step 1Brown hamburger in dutch oven/large pot with the chopped onion and sliced celery.

Step 2When hamburger is cooked through and the onion and celery are tender add the drained water chestnuts, soy sauce, cream of mushroom soup and prepared rice. Cover and cook on low heat until heated through.

Step 3Serve hot with chow mein noodles on top.

Step 4*TIP* If you have leftovers this freezes well!
