This is one of my fall recipes, the family loves flavor and texture...What is great about this is we never get tired of it...It doesn't take long to fix and it is a meal in one all you need is desert to top it off...I have been making this for years. It is a real meal stretcher....

Ingredients For jodie's tamale pie

  • 2 lb
    ground sirloin (lean)
  • 4 Tbsp
    red chili powder
  • 1 1/2 tsp
    garlic
  • 1 tsp
    italian seasoning
  • 1 1/2 tsp
    salt
  • 1 c
    cherry tomatoes
  • 1 can
    corn, undrained
  • 1/2 c
    water
  • CORNMEAL TOPPING
  • 2 c
    yellow cornmeal
  • 2 c
    flour
  • 2 Tbsp
    baking powder
  • 1/2 tsp
    salt
  • 2 lg
    eggs
  • 1/8 c
    cooking oil
  • 1 can
    corn, cream-style
  • 1 can
    green chiles (hot or mild)
  • 1/2 c
    shredded cheese (mexican mix)
  • 1/2 tsp
    garlic
  • 1/2 c
    milk
  • 2 Tbsp
    flour opt if needed

How To Make jodie's tamale pie

    Preheat oven to 400* Large skillet, you can use a large cake pan 9 inch to bake it in if you prefer... Place a cookie sheet under either one you will bake in...

    Brown meat in skillet add chili powder and spices...Add in corn juice and all, add tomatoes into mix and water...Place lid on top and simmer for 10 minutes...

    In medium mixing bowl place all dry ingredients into bowl, stir... Add canned cream style corn, green chili, and all spices mix, add eggs and mix well, add cooking oil, and mix, add cheese, add water a little at a time, till a bit thicker than cake batter....The extra 2 tbsp of flour is because of altitude....

    Remove meat mixture from heat spoon corn meal mixture out over the top of meat mixture...Spread around the top...

    Place a cookie sheet under which ever pan you are using just in case you have slight run over...Your pan will be full, any excess fluid from the meat will cook into the cornmeal mixture....

    Bake for 30 minutes.....Let set for 5 minutes and then serve.....

    I made it the other night we had a chill in the air and I was hungry for Tamale pie...I decided next time I will make it with 3# hamburger and put it in a cake pan and spread the cornbread mixture and add one more can of creamed corn to it to make it even a little bit more moist, still bake it the same length of time though....we have 5 people in the house...we sprinkle extra cheese upon serving it with shredded lettuce chopped tomatoes, chopped onion and sour cream and the grated cheese on top.....they are crazy for this in my house there is never any left.....
