This is a family favorite...we enjoy these on a cold winters night...I always end up making a huge one in my cast iron skillet...Though it never lasts long on our table...A full meal in one with a South Western Flavor...

Ingredients
- 6 medium potatoes, mashed
- 3 large eggs, beaten (frothy)
- 1 cup mexican blend shredded cheese
- 1 teaspoon parsley flakes
- 1/2 teaspoon garlic powder
- 1/4 cup butter and 1/4 cup sour cream
- 1 teaspoon salt
- 1 teaspoon pepper
- TOPPING
- 2 large egg whites, beaten
- 1/2 cup mexican blend shredded cheese
- MEAT MIXTURE
- 1 pound ground sirloin
- 1 teaspoon garlic powder
- 1 teaspoon chipotle chili seasoning
- 1 teaspoon salt
- 1 teaspoon pepper
- 1/2 cup mexican blend shredded cheese(set aside)
- 1 can tomatoes, canned fire roasted
- 1 can corn kernel, whole drained
- 1 1/8 cans green beans french style drained

Step 1Preheat oven to 375* use a deep skillet (cast Iron) to bake in use skillet or dutch oven or baking pan....

Step 2Boil potatoes with peel on...drain and mash with eggs, cheese, spices, butter, sour cream...set aside

Step 3pre pare meat mixture....brown ground sirloin, on medium heat put spices in while browning, add tomatoes, corn, green beans. simmer till bubbling.

Step 4Layer in pan, meat mixture 1/2 C cheese, potato mixture, egg whites, and remainder of cheese

Step 5Bake for 30 minutes...serve hot.....
