Meatloaf has been a family favorite around my house since I can remember. If we ever have any left over then we slice it and fry it and make sandwiches out of it...It goes great with baked potato and salad....

Ingredients

  • 2 lb
    ground sirloin (lean)
  • 2 large
    eggs
  • 1 1/2 c
    oatmeal, uncooked
  • 1/2 c
    salsa verde
  • 1/2 c
    salsa
  • 1 tsp
    salt
  • 1/2 tsp
    sage, dried
  • 1 tsp
    garlic
  • 1/4 c
    evaporated milk
  • 1 can(s)
    tomatoes (fire roasted)

How to Make Jodie's South Western Meatloaf

Step-by-Step

  1. Preheat oven to 400* You will need a cake pan 9"
    In a large bowl, place ground sirloin, eggs, oatmeal, both salsa's, salt, sage, garlic, and milk..
  2. Mix thoroughly with spoon or hand (prefer hand)
    Make a loaf and place in to cake pan...Pour fire roasted tomatoes over the top and place in the oven.
  3. Being it is 2 pounds of beef baking time is 1 hour and 15 minutes Depending on your altitude. Stick steak knife in center must come out clean is done...
