Meatloaf has been a family favorite around my house since I can remember. If we ever have any left over then we slice it and fry it and make sandwiches out of it...It goes great with baked potato and salad....
Ingredients

2 lbground sirloin (lean)

2 largeeggs

1 1/2 coatmeal, uncooked

1/2 csalsa verde

1/2 csalsa

1 tspsalt
-
1/2 tspsage, dried
-
1 tspgarlic
-
1/4 cevaporated milk
-
1 can(s)tomatoes (fire roasted)
How to Make Jodie's South Western Meatloaf
- Preheat oven to 400* You will need a cake pan 9"
In a large bowl, place ground sirloin, eggs, oatmeal, both salsa's, salt, sage, garlic, and milk.. - Mix thoroughly with spoon or hand (prefer hand)
Make a loaf and place in to cake pan...Pour fire roasted tomatoes over the top and place in the oven. - Being it is 2 pounds of beef baking time is 1 hour and 15 minutes Depending on your altitude. Stick steak knife in center must come out clean is done...
