Meatloaf has been a family favorite around my house since I can remember. If we ever have any left over then we slice it and fry it and make sandwiches out of it...It goes great with baked potato and salad....

Ingredients

ground sirloin (lean)
2 large
eggs
1 1/2 c
oatmeal, uncooked
1/2 c
salsa verde
1/2 c
salsa
1 tsp
salt
1/2 tsp
sage, dried
1 tsp
garlic
1/4 c
evaporated milk
1 can(s)
tomatoes (fire roasted)

How to Make Jodie's South Western Meatloaf

Step-by-Step

  • 1Preheat oven to 400* You will need a cake pan 9"
    In a large bowl, place ground sirloin, eggs, oatmeal, both salsa's, salt, sage, garlic, and milk..
  • 2Mix thoroughly with spoon or hand (prefer hand)
    Make a loaf and place in to cake pan...Pour fire roasted tomatoes over the top and place in the oven.
  • 3Being it is 2 pounds of beef baking time is 1 hour and 15 minutes Depending on your altitude. Stick steak knife in center must come out clean is done...
